Or patience, in English. In the Philippines, it is also the name of a meringue cookie that I tried to make – emphasis on the word try. I just didn’t work. The idea came from both boredom and hunger and I decided to take a look at the pinoy snack recipe book that Tatit sent me. I tried one other recipe during Christmas as you might recall the bicho bicho blog entry I made last year. The flavors were there and I just need to work on the presentation for next time. The paciencia, however, was just not successful. I have a theory.

 

The directions called to whip the egg whites until they developed soft peaks but after many minutes of whipping, I could not get it to thicken as it needed to. So I decided to just continue with the rest of the directions and add the sugar and continue the whipping until stiff peaks formed. Obviously I could not get the consistency that would allow for stiff peaks so I just added the flour and proceeded as if all was well. I should have realized that as I dropped the “batter” onto the cookie sheets and saw how thin it was, it was not going to work. What resulted were thin meringue crisps which were tasty but not the desired outcome. Maybe I created a new treat?

On another note, my school won the high school basketball championship today. It was a sweet game and I was able to attend and cheer along the sidelines. The big ol’ sports fan and jock that I am, I was there to see the boys make all of the touchdowns they needed to win the game. GO DRAGONS!

I also realized that we were the only team with no uniforms! The previous administrators felt there was no need to invest in uniforms. That will change – I think its about school pride while T thinks I am just trying to find a reason to try my hand at fashion design a la Project Runway. All I know is that our kids will be looking fierce next year. Have you ever seen a basketball jersey (they are called jerseys, right?) with sequin stars and the school name in glitter? That would be unique. :P
